Recipe of the moment
Serves 4 people
1kg Bintje potatoes
0.5 tsp. fine salt
3 litres peanut oil
1 Valentine fryer
Peel and wash the potatoes. Use a knife to cut your fries into 1 cm thick strips. You can also use a potato cutting machine.
Wash the potatoes several times to remove the starch, then wipe them with a clean cloth.
Heat your fryer to 150°C, place the potatoes in the basket and prefry the fries about 7 min.
Lift the basket, stir well to thoroughly dry the basket. Let the fries cool until dinnertime.
Heat your fryer to 180°C. As soon as the green light is on, fry the fries about 3 min. The fries should end up with a nice color.
Remove the fries, drain well and place them in a bowl covered with paper towels. Remove the paper and salt the fries at your convenience.
Prepare the plates (pre-heated in a Valentie plate warmer) and serve your Valentine fries.
