Recipe n°10 - Apple fritters

For a long time, I thought that the term "Beignet" meant that the preparation was "bathed" in oil! I'm afraid I was mistaken.
The term beignet has several possible origins.
In the Middle Ages, this type of preparation was often referred to as a "Bignet", meaning a sweet or savoury pastry, with meat or even fruit.
Other common Old French words such as "Buyne" and "Beigne" are said to mean "bruise". This would explain why we say "Se prendre une beigne" (take a doughnut)!
Instead, let's keep the much more dignified term "Bigne", which would still mean "to raise" in Old French.
Why do these doughnuts, thought to have originated in the Middle East and travelled the world since antiquity, continue to be so popular with epicureans?
Because they're hot, crispy, creamy and even tasty!
